King (Chinook) Salmon (New Zealand)

Country of Origin: Japan, Kagoshima Weight: Approximately 900g-1kg, 4 pieces per packet This portion has long been seen as the most prized cut for its rich and succulent flavour. Best grilled, pan-fried or broiled. The texture is tender and fine, definitely a treat. Item can be slightly thawed upon receiving to be portioned accordingly before being stored in the freezer for up to 2 months. Once fully thawed, do consume within the same day. As the collar may contain some sharp edges, do note that they may poke through the vacuum bags some times but that does not affect the quality of safety of the product. There may also be some scales left on the collars.

Country of Origin: Japan Size M / L Approximately 1kg (roughly 8 - 15 pieces per packet, but do note number of pieces may vary from the range stated as the size of oysters will be dependant on the harvest/catch to make up 1kg per packet. Please only purchase if comfortable.) The sizing will vary slightly depending on harvest and season. Sashimi-grade Also known as "milk of the sea" - once you've tried it, you'll know why it got this name! These plump and creamy oysters are flash frozen imported from Hyogo Prefecture, Japan, to maintain the freshness of the oyster for raw consumption. These oysters have been flash frozen while alive to maintain their freshness, and taste as good as (and even better than some) live ones! Apart from being eaten raw, they can also be grilled, baked or fried! Serving instructions: - Rinse & thaw the oysters under running water for approximately 5 - 8 mins to remove any remaining particles and debris from the external shells. - Submerge the oysters in ice water for approximately 5 minutes to enhance the texture and flavour. For a mild-tasting fish, it has very high levels of oil, which offers a pleasant buttery mouthfeel. If cooked well, the flesh will simply melt in the mouth! Our fillets contain minimal to no bones as our 9s crew will remove the bones that they can see and feel. The flesh is tender yet it has a bouncy texture that flakes nicely. The fish is usually steamed in order to fully appreciate its delicate texture. Country of Origin: Indonesia Weight: Approximately 1kg Also known as Tenggiri fish, this wild-caught fish is great for fish balls as well as otah. Of course, with a fish as fres as this, you can just slice it and use it for fish soup! Similar to its cousin the King Mackerel (batang), this fish tastes very mild in flavor. The meat is quite firm, and flakes off into small chunks when cooked. Please note that weight range provided is before any descaling, de-gutting and cleaning of the fish. If you request for any cutting for the fish, all parts (such as the head) will also be returned back to you in the delivery. Do note that the presence of roe is subjective to the catch of the day, and may not be present in all fish.

Spanish Mackerel (Bayka) 马交鱼

Stingray meat is flaky yet dense and chewy and tastes like a mix of fish and lobster. We recommend pairing it with our sambal, assam or red curry sauce for a fuss-free and delicious meal! Stingray 魔鬼鱼

Country of Origin: Indonesia Weight: 200 - 300g This is a sashimi-grade item. The belly portion makes for the creamist and richest part of the fish, making it perfect for slicing into sashimi, cubed for chirashi or just pan-fried! With a mildly sweet flavor and a moist, meaty texture with moderately high fat content, it is a versatile fish that tastes amazing however you prepare it. Please note that the colour of swordfish pieces will depend on the diet that particular fish had. The colour may range from white to pink to orange. It is not a defect and has no particular taste difference, just a slight colour variation! For thawing, remove the fish from the packaging and place it on an absorbent material such as kitchen towels and thaw the piece in the chiller for 3 - 4 hours.
