The flesh is meaty and firm, making it an extremely versatile ingredient to work with! Air-flown and wild-caught from Ujang Pandang daily, our batang fish can be fried, pan-fried, stir-fried or steamed! Cut contains bones, while fillet contains much lesser, close to no, bones. Batang (Mackerel) 巴当鱼

Country of origin: Malaysia / Indonesia This wild-caught fish is a local favourite and often seen as one of the more premium fish around, and it's no wonder why! The texture of a grouper is firm with large flakes that easily break apart. A stand-out feature of its flesh is the high levels of moisture. For a mild-tasting fish, it has very high levels of oil, which offers a pleasant buttery mouthfeel. If cooked well, the flesh will simply melt in the mouth! Greenland Halibut Steak Cut 格陵兰大比目鱼

Country of Origin: Malaysia Weight: Approximately 500g What's unique about this fish is that some recipes actually call for the scales to be kept on and served chilled! Known as "oh her" in Teochew, it is traditionally steamed and eaten with a piquant tau cheo or salted soya bean dip. Grey mullet is a good source of omega-3 fatty acids, which can help to reduce one's risk of cardiovascular diseases. This fish is an excellent source of protein. It also has a low mercury content. Please note that weight range provided is before any descaling, de-gutting and cleaning of the fish.

Grey Mullet 乌鱼

Country of Origin: Japan, Kagoshima Weight: Approximately 800g-1kg, 4 pieces per packet This portion has long been seen as the most prized cut for its rich and succulent flavour. Best grilled, pan-fried or broiled. The texture is tender and fine, definitely a treat. Item can be slightly thawed upon receiving to be portioned accordingly before being stored in the freezer for up to 2 months. Once fully thawed, do consume within the same day. As the collar may contain some sharp edges, do note that they may poke through the vacuum bags some times but that does not affect the quality of safety of the product. There may also be some scales left on the collars.

Country of Origin: Indonesia Weight: Approximately 1kg Also known as Tenggiri fish, this wild-caught fish is great for fish balls as well as otah. Of course, with a fish as fres as this, you can just slice it and use it for fish soup! Similar to its cousin the King Mackerel (batang), this fish tastes very mild in flavor. The meat is quite firm, and flakes off into small chunks when cooked. Please note that weight range provided is before any descaling, de-gutting and cleaning of the fish. If you request for any cutting for the fish, all parts (such as the head) will also be returned back to you in the delivery. Do note that the presence of roe is subjective to the catch of the day, and may not be present in all fish.

Country of Origin: Indonesia (Balai) Fillet (250g - 300g) Wild-Caught Also known to some as "Ngor Her", threadfin is a popular choice for both young and old as it contains an array of vitamins and is high in Omega 3. It is also high in protein, calcium and phosphorus, which help to strengthen the bone and teeth. The meat is very fine and it is usually used to make fish porridge for babies. These plump and creamy oysters are flash frozen imported from Hyogo Prefecture, Japan, to maintain the freshness of the oyster for raw consumption. These oysters have been flash frozen while alive to maintain their freshness, and taste as good as (and even better than some) live ones! Apart from being eaten raw, they can also be grilled, baked or fried! A delicious and fuss-free snack, these scallops are savoury and light. We can easily finish all 6 pieces in one sitting! Crayfish 虾婆

Because flower crabs live in the sea, they taste cleaner and sweeter than their muddy cousins which live in river estuaries. What's more, flower crab's meat is smooth, delicate and moist. Please note that weight range provided is before any de-gutting and cleaning of the product. This set may come in 2 - 4 pieces in order to make up the indicated weight before processing - exact number of pieces will vary from day to day's daily catch. Do note that it is natural for the product to have some brownish liquid in the packaging - those are simply the leftover juices from its intestines when our crew chop / clean the pieces for you and is not a sign of defect or spoilage. Because of their delicate nature, they are prone to over-cooking which can result in mushy meat! Avoid soaking or rinsing the flower crabs in excessive moisture to prevent a soggy texture after cooking. Crabs will be cleaned and cut into half by default. Country of Origin: Malaysia Weight: Approximately 500g These edible sea snails are affectionately called “gong gong” here in Singapore and some places in South East Asia like Batam. Conch on its own doesn't have a strong taste, just a hint of saltiness. Its texture is rubbery and soft when chewed. The local version is usually cooked by steaming and the meat is then fished out either using a toothpick or by pulling out its tail before being dipped in a home made chilli sauce.

Country of Origin: Vietnam, processed for Japan Approximately 160g, 20 pieces Perfectly crunchy, creamy and firm, these sashimi-grade cuttlefish slices can be consumed once thawed! As known as Mongo Ika, these slices go perfectly for your sushi, rice bowls, hot pots or even on its own! They are also beautifully scored not only to capture any sauce or toppings that you may place on the slices, but also to provide a better and easier bite. To defrost, simply place item intact in packaging in chiller a few hours before consumption. Avoid running water directly on the opened product itself.
